Red onion marmalade

Hello old and sometimes completely forgotten old friend WordPress. It’s not that I didn’t want to visit, there was just all this other stuff going on and was not feeling the best for a while there and one thing and another…. Ah the road to hell.

Red onion Marmalade.

4kg of red onions
Half bulb garlic
Rapeseed oil
280g butter
280g brown sugar
dry thyme or fresh if its about
chilli flakes
400ml port
2 bottles of red wine
700ml Vinegar, you can use balsamic, red wine or sherry (I usually go with red wine)

This is one of those recipies that you can make your own… you want more heat, up the chilli. Try different vinegars. We used to make vats of this in the restaurant, have dialled back quantities here.

Halve, peel and slice the onions and the garlic as thinly as you can. On high heat add butter and oil and let them get hot… add onions and garlic… stir… add sugar chilli (small pinch for flavour, after that up to you how hard you want to be kicked) add few table spoons of thyme. Turn down the heat and look after them for at least 40 mins. They want to look gooey and caramelised before you go on. Patience.

You sure the onions are ready? Add everything else to the pan.. stir. Simmer gently until the liquid has turned into a marmalade consistency and you can see the bottom of the pot when you are stirring it. This can take an hour or so.

That’s it. You can jar it and store it.
